7 Healthy and Delicious Meals to Make During Quarantine

Ah, cooking. We’ve all been stuck at home cooking, whether for ourselves or for our loved ones, a bit more lately during quarantine. But if you’re like me, cooking (and eating) the same few dishes on repeat is getting a little old. And finding new recipes that are both tasty and healthy can be a hassle.

Well, fret no longer! Here are 7 healthy and tasty recipes to inspire you the next time you’re wandering the aisles at your local grocery store.

Hate washing dishes? Me too. Good thing this recipe only requires one sheet pan. The mix of smoked sausage, bell peppers, potatoes, and green beans served on top of your choice of rice or quinoa makes for a well-balanced meal. And it will still taste great at the end of the week if you prefer to meal prep.

Here’s one for our vegetarian and vegan friends! This recipe for homemade falafel is delightfully crispy and aromatic. All the traditional falafel ingredients—chickpeas, spices, cilantro, and parsley—make this a classic and healthy treat. Don’t forget to add in some lemon zest for a light citrus-y flair. Serve it up in some pita pockets with your choice of veggies and herbs.

Here’s another recipe that only needs one pot to prepare all the ingredients. This healthy take on pasta blends many vegetables, like onion, broccoli, mushrooms, and spinach together. It packs in the flavor by boiling the pasta and the veggies in broth instead of water.

Just because you’re at home doesn’t mean you can’t eat like you are on vacation. With some fresh ahi tuna, this authentic poke recipe will transport you straight to the beaches of Hawaii. This mix of sweet yellow onion, avocado, sesame oil, and chili flakes packs a flavorful punch while still keeping it light and refreshing.

Indian Shepherd’s Pie

This creative fusion dish takes flavorful Indian lentil stew and serves it in a shepherd’s pie. The addition of ghee (clarified butter) to the mashed potatoes on top is definitely the best part. Don’t worry, the lentils, carrots, celery, and peas in the stew will make sure you’re getting plenty of vegetables too.
