It’s the first thing in the morning, and you’re already juggling the day ahead—dashing off to work, tackling errands, or checking off another item on your to-do list. But breakfast doesn’t need to be stressful! It can be fun, quick, and, most importantly, both nutritious and delicious.
The first step to a stress-free morning is setting up your space. Make sure your kitchen is clean, and you’re not scrambling to cook around last night’s dishes. Once that’s out of the way, it’s time to get cooking!
Dish 1: Bacon, Egg, & Cheese Sandwich

Is there anything better than a bacon, egg, and cheese sandwich? I’ll answer for you: no, there isn’t. I know you might be tempted to head to the deli and grab one, but trust me, it’s quicker and cheaper to make it at home. Plus, you avoid the hassle of long lines.
Start by warming your bagel or muffin slightly. Here’s the secret: the butter adds richness and helps the bacon get that perfect crispy edge while keeping it tender on the inside. I like cooking the bacon first, so the eggs absorb all that rich bacon flavor afterward.
Once the bacon is done, add your eggs, cook to your preference, sprinkle some cheese, and fold everything together. The final step? Assemble your BEC (bacon, egg, and cheese) with your favorite condiments and seasonings.
Dish 2: Breakfast Quesadilla

Okay, so it may not beat a bacon, egg, and cheese sandwich, but a crispy quesadilla comes pretty close. Start by placing two tortillas in a hot pan until they turn golden brown. Add your favorite grated cheese, then top with the second tortilla to close it. To take it up a notch, add ham, veggies, or tomatoes—anything that’ll give your quesadilla that extra kick.
Dish 3: Avocado Toast with Mixed Fruit

This is one of my go-to breakfasts, especially when I realize I have avocados that are just about to be too ripe. For this recipe, take a slice of bread or pita and lightly toast it. You can do this in a pan with butter or simply use a toaster. Once it’s crisp, smash the avocado on top, sprinkle a pinch of salt and pepper, and voilà! Breakfast is served.
For a fresh side, grab some washed cherries and blackberries for an extra burst of flavor.
