7 Healthy and Delicious Meals to Make During Quarantine

Ah, cooking. We’ve all been stuck at home cooking, whether for ourselves or for our loved ones, a bit more lately during quarantine. But if you’re like me, cooking (and eating) the same few dishes on repeat is getting a little old. And finding new recipes that are both tasty and healthy can be a hassle.

Well, fret no longer! Here are 7 healthy and tasty recipes to inspire you the next time you’re wandering the aisles at your local grocery store.

One Pan Sausage and Veggies by Chelsea’s Messy Apron

Hate washing dishes? Me too. Good thing this recipe only requires one sheet pan. The mix of smoked sausage, bell peppers, potatoes, and green beans served on top of your choice of rice or quinoa makes for a well-balanced meal. And it will still taste great at the end of the week if you prefer to meal prep.

Spicy Shrimp with Cauliflower Mash and Garlic Kale by Pinch of Yum

There’s nothing like a little spicy seafood to brighten up your day. This dish combines generously spiced shrimp and creamy cauliflower mash with smoky garlic kale. It’s a perfect meal to enjoy in both warm and cold weather.

Crispy Baked Falafel by Love & Lemons

Here’s one for our vegetarian and vegan friends! This recipe for homemade falafel is delightfully crispy and aromatic. All the traditional falafel ingredients—chickpeas, spices, cilantro, and parsley—make this a classic and healthy treat. Don’t forget to add in some lemon zest for a light citrus-y flair. Serve it up in some pita pockets with your choice of veggies and herbs.

Chicken Stir Fry by Mom on Timeout

Stir fry is always a quick, easy, and delicious way to get your nutrients. This chicken stir fry recipe combines chicken breast and a diverse variety of vegetables with a classic soy sauce-based condiment. Add some rice and noodles to complete the meal.

One Pot Pasta by Erin Lives Whole

Here’s another recipe that only needs one pot to prepare all the ingredients. This healthy take on pasta blends many vegetables, like onion, broccoli, mushrooms, and spinach together. It packs in the flavor by boiling the pasta and the veggies in broth instead of water.

Shoyu Ahi Poke by Fixfeastflair

Just because you’re at home doesn’t mean you can’t eat like you are on vacation. With some fresh ahi tuna, this authentic poke recipe will transport you straight to the beaches of Hawaii. This mix of sweet yellow onion, avocado, sesame oil, and chili flakes packs a flavorful punch while still keeping it light and refreshing.

Indian Shepherd’s Pie by Feasting at Home

This creative fusion dish takes flavorful Indian lentil stew and serves it in a shepherd’s pie. The addition of ghee (clarified butter) to the mashed potatoes on top is definitely the best part. Don’t worry, the lentils, carrots, celery, and peas in the stew will make sure you’re getting plenty of vegetables too.

Bonus: No Bake Raspberry Lemon Cheesecake by My Baking Addiction

I couldn’t help but sneak in a bonus dessert at the end because what’s dinner without dessert? This refreshing cheesecake requires no time in the oven, and the fresh raspberries and lemon juice make this course fun and fruity. This summery treat will go great with any of the meals we’ve listed here. Can’t forget to treat yourself!
